2014 Blogger challenge - Lemon meringue pie cake

I found this recipe on youtube on Jamie Oliver's youtube channel and I just had to make it..

I am so happy with how this turned out :) It was really yummy and sweet.

You will need ....

3 8 inch cake pans

For the cake....

375g Caster sugar
375g Soft butter
6 Eggs
The rind of 6 Lemons
375g Self raising flour
2 Tbsp Milk
2.5 Tbsp Lemon juice

For the Lemon curd....

25g Corn flour
Rind and juice of 1 Lemon
Enough water to make the lemon juice up to half a pint
75g Caster sugar
2 Egg yolks
25g Butter

For the Marsh-mellow meringue icing....

175g Caster sugar
5 Tbsp Golden syrup
2 egg whites
1/4 Tsp salt
1/4 Tsp Cream of tartar
2 Tbsp water

1. Start off with the cakes, Cream the butter and sugar together. Once creamed add six eggs into the mixture and mix until you have a smooth batter.
2. Add the zest of the lemons and the flour and fold them into the mixture again make sure you have a nice smooth batter.
3. Add the milk and the lemon juice and mix.
4. Put the mix into the cake pans and Bake on 170 degrees for 25 to 30 minutes.
5. Moving on to the lemon curd, mix the rind and juice of one lemon with enough water to make it up to half a pint.
6. Mix the Cornflour with a little of the lemon water to form a paste, once all the cornflour has dissolved add the butter and the sugar into the pan and stir on a medium heat. When ready the mixture should be quite thick.
7. Cool the curd until it is luke warm then add in the 2 egg yolks. Beat the yolks in until the mixture is nice and smooth.
8. Finally move onto the marsh-mellow icing. Put all the ingredients for the icing into a bowl and place the bowl on a pan of simmering water on a medium heat (About 7 cm of water will be plenty) Whisk this with an electric whisk set on the fastest speed until it goes gooey and thick like melted marsh-mellow.
9. Once the cakes are completely cooled add the lemon curd in between each layer. Cover with lots of the meringue icing! If you have any left over curd you can swirl it on top like I did!

I really hoped you liked today's post, would you like to see more foody posts from me?

You know when you go in boots and grab every peachy/orange lipstick you see, well that kind of happened here.

I picked up two of these in the shades 04 Peach on the beach and 03 Orange punch. I'm really excited to try these as everyone loved them last summer.

Sleek True colour lipstick £4.99

I have also heard good things about the matte lipsticks from sleek so I decided to pick up Papaya punch, which is such a fabulous colour.

I had to go and pick up the shade elusive as it seems to be everyone's favourite shade from the line, I really love the other two shades I have so I just had to get this one.

I have never really heard anything about these lipsticks but I spotted the colour 151 and I couldn't leave it behind, I'm excited to try this and let you guys know what I think.

Lush lip scrub - Reviewed

Lush bubblegum lip scrub £5.50 //Here//

Oh my I actually have no idea how I lived without this! I suffer from very flaky lips and this has worked wonders. It also tastes absolutely delicious and smells divine. I've found that not only does this sort out my lips at the time but it has also left them in a much better condition over time.

I highly recommend picking one of these up as they are so effective.

#BOBBlogchallenge Week 5 Budget beauty.

Ohhhh so many things to choose from! Due to me owning more drugstore than high end products I had so many things to choose from but I think I've managed to whittle it down.

The first product I picked is the MUA Mosaic blush in English rose, this is a really pretty shimmery rose-y coral. This looks so beautiful on the cheeks and can be used sparingly but it can also be built up to a really intense flush.

The other MUA product I picked is their single eyeshadow in Shade 28. This a metallic copper shade which is so creamy and blends like a dream. I have a couple more of these shadows and they are definitely my favourite lower end drugstore singles.

Next up I picked out the Maybelline colour tattoo in On and on bronze, I feel like I talk about these to much but they are so similar to the Mac paint pots it's crazy! I love this colour as it's fabulous for everyday.

Finally I chose the Natural collection lipsticks, these are my favourite cheap lipsticks. I really don't like the MUA lipsticks I find them to be really drying but these are the complete opposite they are so hydrating. Above the colours from the left to right are Rose bud, Raspberry and sand castle.

I hope you enjoyed this post,

Cole Xx
