Sweet treats - Apple, Cinnamon and Ginger muffins


Now these are by no account the prettiest things I've ever baked but they were super delicious and fairly simple. 

Makes 12. 
You will need...

115G Flour 
115G Butter 
115G Sugar 
2 Eggs
2 Medium sized cooking apples (Peeled and chopped into small pieces) 
1 1/2 Tsp Cinnamon 
1 1/2 Tsp Ginger 

For the icing 

200G Icing sugar 
4-5 Tbsp water (You may need more this is just a rough guide)
1/2 Tsp Cinnamon 
1 Tsp Ginger 

Step 1 ..

Put the sugar and butter into a bowl and cream together until light and fluffy. 

Step 2 ..

Add the eggs into the butter and sugar adding a tbsp of flour to stop the mixture from curdling. 

Step 3 ..

Sieve in the flour and spices and fold into the liquid mixture with a metal spoon. 

Step 4 ..

Coat the apple in a dusting of flour so that they don't drop to the bottom of the muffins and fold evenly into the mixture. 

Step 5 ..

Fill the muffin cases and put into a pre-heated oven at 180 degrees celsius or Gas mark 6 for 15 to 20 minutes. Once baked remove from the oven and leave to cool for an hour or two. 

Step 6 ..

Make the icing by the packet instructions and add the spices. Spread over the cakes. 

Step 7 ..

Sweet treats - Lemon and Ginger Cheesecake






I love me some cheesecake! This is one of my grandparents favourite things I bake so I thought I'd share it with you! 

You Will Need 

For the base 
450 G Ginger Nuts
150 G Unsalted butter 
3 Tbsp Golden Syrup 

For the topping
300 G Full fat cream cheese
300 Ml Double cream
3 Lemons 
2 Tsp Vanilla essence 
150 G Icing sugar

1. Start off with the base, crush the biscuits with a rolling pin until the pieces of biscuits are the desired size. Then pop the butter and golden syrup into a pan and melt. 

2. Pop the butter and syrup into the biscuit mixture and mix together and press the mixture into a tin. 

3. Put the base into the fridge and move on to the topping. Start of by putting the cream into a bowl and whisking with an electric whisk (You can do it by hand but i'd suggest you use a electric whisk).

4. Once the cream is forming soft peaks put in the zest of the lemons, the cream cheese, vanilla essence and the icing sugar and fold in with a spatula or a metal spoon. 

5. Pop the filling onto the base and put back into the fridge for at least 4 hours preferably overnight but if your anything like my family it never makes it!
