I feel like I haven't put up a baking post in forever, but I have promised myself I will try and bake at least once a month. Today I have a super simple recipe from my Be.Ro book. These are really delicious and so easy.
You will need...
300g Self raising flour
A pinch of salt
3 Tsp Ground ginger
100g Caster sugar
50g Margarine
3 Tbsp Golden syrup
4 Tbsp Milk
1. Preheat the Oven to 160C, 325F or Gas mark 3 and grease and line a baking tray (You might need 2)
2. Put the flour, ginger and salt into a bowl and mix together.
3. Heat the margarine, sugar and syrup in a pan over a medium heat. Once all the margarine is melted add into the dry ingredients and mix.
4. Once the Margarine mixture is fully combined with the dry ingredients add the milk and use your hands to bring the mix into a ball of dough. Once you have a dough knead it for 1-2 minutes.
5. On a floured surface roll out the dough and cut into desired shape.
6. Bake for 10-15 minutes.
7. Once they are a gorgeous golden brown colour remove from the oven and place on a cooling rack.
8. Once cooled you can either add icing or just dig straight in!
